I definitely suffered from carb flu, but I also lost 10 pounds the first week. I started the diet because of my food sensitivities, but the weight loss was a nice side effect since I was a little overweight. I later ran across the Primal Blueprint and felt this fit a little better than Paleo since it allowed potatoes. I am so restricted on foods that I needed something with more calories and carbs. Even though I did not restrict carbs or count calories, I ended up losing 55 pounds. The weight melted off without any exercise at all. I convinced my husband to try gluten free and he lost 30 pounds in about 2 months. Now if I could just convince him to cut out the other grains too.
I have never felt better in my life. I have more energy, less moodiness, and on top of that my chronic symptoms including asthma, severe muscle spasms, headaches, insomnia, etc. have mostly disappeared. Corn has tainted our entire food supply, so I suspect most of my symptoms that crop up now and again are due to the corn allergy. I suspect that most Americans have food sensitivities and don't have a clue. I suffered from so many symptoms that so many other people share, but I am better now. I was actually told I could try gluten again after strict avoidance for 4 months, but I have no desire whatsoever to eat it. I hope that my story and others like them can encourage those afraid to make the leap that there is nothing to lose (other than maybe weight) and possibly a lot to gain (better health the foremost).
The transition from convenient fast food to cooking everything.
What advice (if any) would you give to someone interested in trying a carbohydrate-restricted or paleo diet? Were there any obstacles that you overcame that could help future dieters?
Cooking large batches of food is the biggest thing that helped me. It means less time in the kitchen, less mess, fewer trips to the grocery store, and most importantly not running out of food to eat.
